Just ate pasta made on the Danish island of Bornholm with durum wheat grown on the island and ramsons (ramsløg in Danish, similar to American ramps aka wild leeks). Significant for three reasons.
(1) Absolutely the best pasta I’ve ever made and eaten myself.
(2) I literally can’t think of another time I’ve had pasta not from Italy or Italian durum wheat.
(3) God damn good pasta!
Also, swam again today. 2 FOR 2 AIN’T NOBODY CAN STOP ME NOW

Found out today that there is a beach five minutes from our dorm. Swimming every day until we leave.
I don’t think the ease, safety, and convenience of bicycling in Copenhagen could be more opposite from the bike infrastructure in Amherst. Granted, things are improving, but it’s still a constant battle between myself, cars, pedestrians, and assholes every time I get on my bike, which is every day. Here in Copenhagen, bikes have the right of way in nearly EVERY situation as far as I can tell. You hardly get near cars or pedestrians while biking because there are curbed bike lanes on almost every street, often separated from the road by parked cars. The bike lanes are also on a different level than both the streets and the sidewalk, and have their own traffic lights. (We passed our danish exam!) I’m currently peeling some potatoes and parsnips for the dinner I’m making (partially for our friend Kev’s arrival!) tomorrow. I’m going to roast a duck as well (for the first time)!
Also, it occurred to me today that I’m pretty sure the wind in København is always blowing in your face, no matter what direction you’re biking in.

I believe that our friend Monika is scheming to force feed me (like geese for foie gras) until my liver is big enough for another Polish Dinner. I was going to add a picture, but not very many nice things come up when you search “foie gras” in Google images.

The past couple of days I’ve spent a lot of time playing frisbee, climbing on playgrounds and riding bikes in the rain. Now that the weather is nice(r), cph has been extra fun. My friend Monika has been my main accomplice in these adventures. We went to go see a danish band, Dig og Mig, the other day in the drizzle and still had a great time. (rachel)
OH! my family, zak and kev will all be in cph within the next week!

Sorry sorry sorry! I hate when people don’t post on their blogs for a really long time so I apologize for that! It’s been a busy few weeks. First traveling, then new courses starting (Organic Food Systems), then mom and dad came to visit, and soon more friends and family! So, I will start posting regularly again. Here’s some pictures of me with a moose and Rachel with a smurf (from our travels) to get things started.

My genomics class is apparently in the animal sciences part of the campus. I know this because today I saw two dead cows in the middle of the road that my class is on.
Also, I saw a woman riding her bike while wearing a leather jacket and smoking a cigarette. Her drying lungs inside her leather jacket, also a dead cow?
